Double chocolate cup cake with Ganache topping

Cup Cake
makes 12 cupcakes

Ingredients

Semisweet chocolate for batter - 1.5 cup
Semi sweet chocolate to mix at end - 1.5 cup
Unsalted butter (cut in small cubes) - 2 and 1/4 stick
Eggs (warmed)- 6
Sugar -1 cup
Brown sugar- 1/2 cup
Vanilla extract - 2 tsp
All purpose flour - 3/4 cup
salt - 1/4 tsp
baking soda- 1/4 tsp


Preparation

Prepare the Flour by sieving flour , salt and baking soda 2 - 3 times

Place Chocolate and butter in a double boiler and melt them . Stir with rubber spatula occasionally to avoid forming lump

Remove the mixture from boiler and transfer it to a another bowl

place eggs in a mixing bowl , whip it with wire whip until frothy

Add sugar and brown sugar and whip until the mixture is pale and frothy and holds a slowly dissolving ribbon when beater is lifted

Add vanilla and blend for few minutes

Fold in chocolate mixture scraping down the sides

Fold in Flour in batches till the wet and dry mixture is blended well

Add the extra chocolate chips at the end and fold in

Baking Instruction

Fill the muffin pan 3/4 with the batter

Bake for 9 minute and the switch the position and bake for another 9 minutes for even baking

Cool for 15 minutes before storing in airtight container

This can be served as muffins or with Ganache icing .
