Eggless chocolate cake

All purpose flour - 1 1/2 cup
Cocoa Powder- 3 tbsp
Baking soda - 1tsp
Sugar - 1 tsp
Salt - 1/2 tsp
Oil - 5tbsp
Vinegee- 1 tbsp
Cold water- 1 cup

Preparation:

In a mixing bowl, add Flour, Cocoa Powder, Baking Soda, Sugar and Salt.  Mix well
Add in Oil, Vinegar, Vanilla Extract and Water
Mix the wet and dry ingredients together till there are no more lumps.

Pour batter into a greased  baking pan. 

Bake at 350 degrees F (approx 180 degrees C) for about half an hour. Poke a toothpick or fork into the center.  If it comes out clean, the cake is ready.

Remove pan from the oven and cool for about 5 minutes before flipping it over onto a platter.

NanKhatai

Ingredients


All purpose flour - 1/3 cup
Sooji- 1/3 cup
Gram flour- 1/3 cup
Baking soda- 1/8 spoon
Cardamom seed (ground) - from 2 cardamoms
Unsalted butter - 1/2 cup
Sugar - 2/3 cup
Dry fruits (In small pieces)- 1 tbsp

Preparation
Pre heat the oven to 375 degree.
In a bowl, mix the all-purpose flour, gram flour, sooji, baking soda and cardamom powder and set aside.

Let the butter come to the room temperature (butter should be soft not melted)
Add butter and sugar in a mixing bowl and beat for two to three minutes until light and fluffy.
Add the flour mix to butter and sugar mixture and knead them together to make smooth dough.
Divide the dough into about 24 equal parts and make them into balls.

Press each ball between your palms lightly; every piece should be about 3/4″ in thickness.
With a sharp knife softly draw a tic-tac-toe design on the top and put few pieces of almonds and pistachios and press them into the dough gently.
Put Nan khatai on a lightly greased cookie sheet and bake at 375 degrees for about 13 to 15 minutes or until Nan khatai are lightly gold brown.

After they are lightly golden brown remove the cookie sheet fro
m the oven.  Let the Nan Khatais cool down for two to three minutes before taking them off the cookie sheet.

French Bread

Ingredients:
Active dry yeast- 1 pck
Lukewarm water - 2 cups
Salt - 1 tbsp
Flour- 6-8 cups
Cornmeal - for sprinkling
Preparation:
Add yeast to the water and keep aside for 15 minutes
Add salt and stir

Add flour, 1 cup at a time and mix with a spoon to make a smooth mixture
Transfer to floured surface

Knead until smooth and elastic













shape in a ball and place in greased surface
Cover with foil
leave too rise till it doubles (2- 4 hours)

Transfer to lightly floured board and make two long loaves
place in a baking tray and sprinkle cornmeal

Let it rise for 5 minutes
Make marks on top with knife
Brush with water and place in cold oven
place an oven safe bowl of boiling water in lower shelf
heat at 400F
Bake until crusty and golden




Lemon Mousse Cheese cake

Ingredients:
Cream cheese   - 16 Oz
Sugar - 3/4 cup + 1/4 cup
Flour- 1/4 cup
egg- 2
Lemon Juice and rinds(chopped) - 1 1/2 lemons
Graham crackers- 1/2 cup

Preparation:
Preheat oven at 325 F
Beat cream cheese until smooth

add 3/4 cup sugar and beat again
Beat until light

Beat in flour

Add egg yolks and lemon juice and rinds

Beat until smooth and blended

In another bowl, beat egg white and 1/4 cup sugar till stiff and glossy

Add egg whites to the cheese mixture and fold in
pour in prepared cake pan

Place pan in a larger pan and pour hot water in larger pan
bake until golden

let it cool in rack

cover and refrigerate for atleast 4 hours

unmould in a plate \smooth the top and press graham cracker

French Bread rolls

Ingredients
Warm water- 1 1/2 cup
Yeast- 3 tsp
Sugar- 6 tsp
Oil- 6 tsp
All purpose flour- 4 cups + some for flouring the surface
Salt- 1 tsp
Preparation
In a bowl, stir together water , yeast and sugar and let it stand for 10 minutes till it becomes creamy

In a large mixing bowl, mix 2 cups flour oil and salt. Add yeast mixture to it. mix together. mix rest of flour, 1/2 cup at a time till it leaves the sides of the bowl

Transfer to lightly floured surface and knead till it is smooth

Grease a bowl and place dough over it. Grease dough from top

Cover with damp cloth and leave at warm place for 1 hour till it doubles

punch the dough and knead in ligtly floured surface

make balls and place in the baking dish. leave enough space between balls

cover with damp cloth and leave for about 2 hours till it doubles
preheat oven at 400 F
Place the baking dish in the preheated oven when its size is doubled.
Bake till the crust is hard
