Cheesy Focaccia

 Dough 

unbleached bread flour - 2 1/2 cup

yeast - 1 1/2 tsp

honey - 1 tbsp

lukewarm water - 1 cup

olive oil - 2 tsp

Topping

vegetables 

olive oil - 2 tbsp

cheese - 1/2 cup

herbs 

salt to taste

Recipe 

Mix yeast , salt and flour 

add oil  and honey to warm water

mix dry and wet ingredients and make dough 

cover and keep aside for 20-30 minutes while preparing toppings

Cut the veggies in desired shape and pattern 

uncover dough and stretch it till it is about 1 1/2 inch thick 

cover and keep aside while oven is heating at 450 degree with a bowl of water 

arrange topping on dough and sprinkle salt and oil

bake focaccia for 20 - 25 minutes

Savory Cheese and Onion Scones

 Ingredients:

All Purpose flour - 2 cups 

rolled Oats- 1 cup

baking powder - 2 tsp

salt - 1 tsp

Baking soda - 1/4 tsp

unsalted butter (cut in 1/2 inch cubes and chilled) - 1/2 cup + 1 tbsp

shredded Cheese - 1 1/4 cup

 Chopped Onion - 3/4 cup

garlic - 2-3 clove

Parmesan - 2/3 cup 

Buttermilk - 1 cup

Eggs - 1

Honey - 2tbsp

egg for egg wash - 1 

Method:

Step1 Preheat oven to 400deg F 

Step 2: Combine flour , oats, baking powder, salt, baking soda and whiskfor 5 minutes 

Step 3: Add butter and whisk with knife  cutting the butter for 10 - 15 minutes till butter looks like course meal (size less than a tiny pea).

Step 4 : Stir  cheese, onion, garlic and parmesan 

Step 5 : in a medium bowl, whisk butter mink, egg and honey . 

Step 6 : Pour the buttermilk mixture to the dry ingredients and stir till a crumbly dough is formed . 

Step 7 : Divide the dough in 2 parts . Take one part and make a disk 1/4 in in thickness. Divide the disk in 12 wedges 

Step 8 : Bake the scones for 14 minutes . Rotate the pan and bake for another 14 minutes until the scones are golden brown and feel firm when touched lightly 

 

Not Lowfat Chocolate Doughnuts

 Ingrdients:

All purpose Flour - 2 cups+ 1 tbsp

Baking Powder - 1 1/2 tsp

Baking soda - 1/2 tsp

Salt - 1/2 tsp

Sugar - 1 and 1/8 cup 

Cocoa powder - 1/2 cup

chocolate morsels\ grated - 1/2 cup + 1/2 cup for topping

very hot water - 3/4 cup 

unsalted butter - 1/4 cup  + 1 tsp

buttermilk - 1 1/4 cup 

Eggs - 2 

Vanilla extract - 1 tsp

Icing sugar for coating pan 

Step 1: Preheat oven to 350 deg F . Prepare donut pan by spreading oil on it and coating pan with icing Sugar 

Step 2: whist together flour , baking powder , baking soda and salt

Step 3 : In a mixing bowl, combine sugar , chocoa powder and chocolate morsels . Add hot water and butter and whisk till the mixture is smooth . set aside till mixture is warm. Add buttermilk, vanilla and egg. and whisk to combine

Step 4 : Fold in dry and wet ingredients in batches. Add extra chocolate morsels in the mixture  and pour the batter in the prepared pan 

Step 5 : Bake for 10 minutes . Rotating the pan in 5 minute . Let it cool in pan for 5 minutes and then cool in wire rack

Classic Pizza

makes 4 6 inch 

 I got this recipe from the book Patio Pizzeria book by KAren Adler and Judith Fertig. The recipe of dough is similar to the usual pizza dough I makse, but this pizza has a nice olive oil flavor that I really love

Ingredients: - 

All purpose flour / bread flour - 2 and 1/2 cup + more for dusting 

Salt - 1 and 1/4 tsp

instant yeast - 2 tsp

lukewarm water - 1 cup

honey - 1 tsp

olive oil - 1 tbsp


In a mixing bowl, stir flour, yeast and salt 

Mix water honey and oil 

add the water mixture amd mix to make dough

knead till the dough is not sticky and springs back like pillow

spread olive oil on the dough and cover and keep till it doubles 

Dough can be refrigerated for upto 3 days and bring it to room temperature before cooking 

Preheat ven at 450 and leave it for 20 minutes

divide the dough in 4 parts .

take one part , knead it and spread the dough to give i pizza shape . make the lip at the side and keep aside for 15 minutes

Spead pasta sauce, cheese and add toppings 

bake for 10 minutes

Oatmeal Raisin Pancakes

 Ingredients

All Purpose flour- 3/4 cups

Whole Weat flour - 3/4 cups

Oatmeal - 1/2 cups

Salt - 1 tsp

Baking powder - 2 tsp

Brown sugar - 1/2 cup

Eggs -2 

Raisin - 3/4 cup

milk - 2 cups

Butter - 3 tbsp

vanilla extract - 1 tsp


Method:

Step 1 - Warm milk , vanilla and butter and keep aside

Step 2 - Keep eggs in warm water for 10 minutes

Step 3 - Combine oatmeat , allpurpose flour , whole wheat flour , baking powder, sugar and raisin in a large mixing bowl .Whisk and keep aside

Step 4- Whisk egs in a seperate bowl for 5 minuttes

Step 5 - Add milk mixture to the flour mixture and fold

Step 6 - fold in eggs 

Step 7 - pour 1 vcup mixture on the pan. Flip it when it is done from one end 

Serve with maple syrup and butter

Cheese Pizza

makes 2 - 12 inch pizzza

Ingredients:

Warm water - 1 1/3 cup
yeast - 2  1/4 tsp
sugar - 2 + 2 tbsp
olive il - 2 tbsp + more for coating 
salt - 1 tsp
all purpose flour - 3 1/2 cup
cornmeal for dusting (optional)
pizza sauce , cheese and topping

Dough

Add 2 tsp sugar to warm water , whisk and let it stand for 5 minutes

Add salt and olive oit to the flour and mix . Add the water mixture and remaining sugar to the flour and knead the dough till it feels a little soft (bounces back on pokimg)

coat the dough with olive oil and allow to rise in room temperature for 2 hours or in refrigerator for 24 hours

preheat oven at 475 and allow it to heat for 20 minutes

prpare the pan by coating it with oil and sprinkling cornmeal or use cookie s=heet on top of pan

divide dough in 2 parts . shape each partwih floured hand or rolling pin . stretch to 12 inch diameter . Lift the edges to form a lip

cover and keep aside for 10 minutes 

spread pizza sauce . cheese and topping

Croissant


Time needed - about 5 hours 

Serving - 15 crossiants

Ingredients : 
All purpose flour - 4 Cups
Sugar - 1/3 cup
yeast - 4tsp
salt -- 2 1/4 tsp
Butter - 2 1/2 sticks
Milk - approx 1 cup
egg white

Step 1 - Add flour , sugar , salt , yeast in a bowl and give it a whist to combine fluff it up 
step 2 - cut butter in 1/8 in size and toss it inside flour . Mix lightly with laddle so that the butter does not melt 
Step 3 - Add milk 1/4 cup at a time and stir with laddle. Make sure teh butter is not broken or melted . Stir till the mixture is stiff 
step 4 - wrap the mixture and refrigerate for an hour
step 5 - On a floured  surface , roll the mixture and fold it in 3 folds from both sides . Repeat the process 4-6 times. untill the butter streaks are smooth and flat . if the butter gets soft, refrigerate for about 15 minutes before resuming to fold
Step 6 - wrap tightly and refrigerate for another 1 hour 
Step 7 -Divide the dough in half . Keep one in refrigerater while working on another 
Step 8 - take one half of dough and rol in thin long strip( about 2 ft)
step 9 - cut the rolled dough in rectangle and then diognal in triangles
step 10 - slit 1/2 inch cut in the triangle and roll the Croissant . then bring the two sides together to give it a curve
Step 11 - Repeat the same with teh other half dough 


Step 12 - cover and keep the Croissant aside to raise to double size (about 1 hour)
Step 13 - Bake the crossiant at 375 for 15 minutes or til crisp from outside
